Background Info
Our S.O. India Sitara espresso is unique in that it is single origin and 100% robusta. Containing twice the caffeine as Arabica coffees, this robusta coffee has a delightful nose of vanilla, honey, maple syrup, and nuts. In the cup, it is full-bodied with a pleasing, rounded acidity and long, heavy finish. Because of this, S.O. India performs extremely well in milk beverages.

We think Sitara, which just so happens to mean “bright star,” certainly shines above all other robustas, even the best Kaapi Royale robustas.

In the Karnataka State of India, from the Sethuraman Estate, our S.O. India Sitara is grown at an elevation of 2,500 feet in the mineral rich soils of the Bhadra river belt. The Sethuraman Estate was started in the 1950’s with the goal of producing the world’s finest Robusta coffees, and because of this, the coffees grown here are quite unlike any other in the world. The preparation and attention to detail in the coffee processing rivals the best Arabica processing. Sethuraman’s coffees are 100% shade-grown under arecanut and coconut trees wrapped in pepper vines. The coffees are hand-harvested and sorted. The beans are then pulped, naturally fermented, double-washed, and then patio-dried. The result of this effort is the Sitara Parchment Robusta, the Ne Plus Ultra of Robusta coffees.

Fantastic! Clearly one of the finest s.o. espresso's I've ever experienced. Hints of rose petals, vanilla, chocolate -lingering aftertaste. Must be tasted!

Beyond my Abilities
I explored the possibilities of this espresso using a Mazzer Mini grinder and a Quickmill Anita home espresso machine. The robusta taste was hard to break away from, but with an extremely fine grind and up dose the shots spilled out a beautiful crema that varied in flavor from vanilla to cumin and spices. The shots always performed well in milk except when pouring latte. The shot was difficult to pour into because of the density of the crema. This espresso has a complexity that is hard for me...

Great coffee
This one kind of flies under the radar. Doesn't really knock you off your feet, but gives a consistently great cup of coffee.
