Background Info
A single origin espresso. Our S.O. Brazil Yellow Bourbon comes from Fazenda Cachoeira in the Mogiana region of Brazil. The farm is located at an elevation of 4000 ft. The average temperature is 66°F. The farm has been in the hands of the Carvalho Dias family for over 100 years. The Carvalho family knows that in order to produce excellent coffees they need to have happy dedicated employees. Fazenda Cachoeira pays fair living wages to its employees and provides housing, schools, churches clinics and sporting facilities for its employees. Environmental responsibility and sustainability are important to Fazenda Cachoiera. The farm is surrounded by natural forests which are carefully disturbed. Solid waste produced is reused as fertilizer. The coffees produces by Fazenda Cachoeira are among the best in all Brazil. They are consistently in the finals of the Brazil Cup of Excellence competition. They have in the past received the Illy espresso coffee award.

Our S.O Brazil Yellow Bourbon is produced from all yellow Bourbon strain coffees. Yellow Bourbon is a prized traditional varietal that produces yellow rather than red cherries when ripe. The coffee is patio dried with the entire cherry still on the bean. This results in excellent sweetness and body as well as enhanced flavors.

This espresso is carefully coaxed to a Northern Italian-style roast (medium roast with no visible oils on the bean). The result is a soft pleasing sipping espresso. Like a fine Cognac. This coffee is Brazil at its best. Sweet aromatics of cherry, almond and raisin. In the demitasse these aromas mix with a mellow body and quiet pleasing acidity. Close your eyes and you may smell the sweet jasmine-like aroma coming from the endless coffee trees that cover the sun drenched rolling hills of Cerrado.
