Background Info
This Brazil comes from the Fazenda Cachoeira, a farm at 3000 ft + altitude in the Mogiana region of Sao Paulo. It is produced entirely from the Yellow Bourbon varietal, a traditional varietal that produces yellow rather than red cherries when ripe that is prized for its greater sweetness and complexity over modern cultivars.
Fragrant, sweet floral and ripe cherry aroma that carries into the cup where it intermingles with hints of caramel, wine and dark chocolate. Nice body with good acidity for a Brazil that livens the cup.

A gently acidy coffee, with a melodic sweetness and delicate complexity: sweet tomatoes and milk chocolate, perhaps a hint of fresh-cut cedar and a shimmer of jasmine running from aroma through cup to the clean, refreshing finish.
