Background Info
Bali is a hidden jewel along the string of islands which makes up the Archipelago called Indonesia. Located between East Java and Lombok, Bali is known as a tropical paradise. Bali possesses natural beauty, a picturesque landscape and plenty of sunshine. Balinese coffees have traditionally been sold exclusively to the Japanese market.
Our Bali Shinzan is produced by small holder farmers. Grown at altitudes of 4000 to 4800 ft, Shinzan is almost exclusively of the Typica varietal. The coffee undergoes wet processing, where red cherries are pulped the same day they are harvested up into the early morning hours before they are fermented for about 60 to 72 hours. Afterwards, the pulped coffee is thoroughly washed in a water channel and then sun dried. The green beans are then hand sorted twice before export.

Bali has the heavy body and soft acidity one would expect of an Indonesian coffee but offers a more refined version of the herb and spice flavors that this archipelago is known for. The cup has a decidedly milk chocolate and caramel character that serves as a nice backdrop for the exotic flavors that dance in the cup – lime, tobacco, and espresso.
