The processing of coffee is an important step between harvesting the coffee cherry and shipping the green (or unroasted) coffee.  Processing entails removing the fruit from the coffee seed (or bean) and drying the bean. Depending on how this is done, the processing can signficantly impact the final characteristics of the coffee, since poor processing can lead to defective, dirty tasting coffee.
