Intense fragrance of spices and molasses, nutty and herbacious with a layer of sweet, ripe tomato in the wet aroma. Caramel and brown sugar prevalent in the cup, with raisin and a bite of lemon zest in the acidity. Extremely balanced in body and acidity with a long lingering finish.
"Delicately complex, crisp. Milk chocolate, raspberry-like fruit, a hint of night-blooming flowers in aroma and cup. Brisk, softly tart acidity; silky mouthfeel. Sweet, juicy, resonant finish." -Ken Davids, Coffee Review
Occasionally we come across a coffee that, for lack of a better metaphor, just kisses you upon first sip. It's that "wow" moment in coffee when you realize or remember just how amazing a coffee can be. We found that in this Organic Costa Rica. Not only were we amazed by the quality, but also the level of quality delivered was like nothing we've tasted from an organic coffee.
It's no such surpise that we found our wow moment in a Costa Rican coffee. Costa Rica is a role model when it comes to high-end specialty microlots and coffee. Farmers live within higher standards than their counterparts at other origins. About ten years ago many farmers started building their own micro mills in order to keep their coffee separate from commercial coffee, get access to better prices, and sell a superior product. The quality we see out of Costa Rica is very consistent, as the farms are very high tech and have a high tree density with adequate fertilization resulting in higher yields.
Helsar de Zarcero is a medium sized mill by Costa Rica standards. They mill coffee from their own farm (Organic Santa Lucia) and a set of exclusive high-quality producers from Lourdes de Naranjo and Llano Bonito de Naranjo micro-region (West Valley).
