    This is a lush coffee with a tropical effervescence. In the bouquet, vanilla-like floral notes dance with hints of lemon and lime. These notes become richer and juicier in the cup, deepening into mango, pineapple, and cream, which then evolves into milk chocolate and green tea in the finish.

    Background Info

    To us, “Ethiopia style” is a celebration of natural-processed coffees where sweet fruit and wild citrus jump from the cup. Natural processing means picking the coffee cherries and setting them in the sun to dry without any removal of the fruit surrounding the coffee seed (bean). The fruit dries hard around the seed and is then removed via a machine. Because the seed remains in contact with the fruit so long (anywhere from one to three weeks), natural coffees are often quite fruity and heavy in body. Unfortunately, for this same reason, natural coffees also have the greatest chance to contain defects from the drying process. As the fruit dries in the sun, it creates the perfect opportunity for mold or rot to set in, and with these types of defects, just one bad bean can ruin an entire pot of coffee. Therefore, finding exceptional Ethiopian coffees can be quite the journey. The perfect balance of fruitiness and cleanliness is hard to deliver. So…
