An excellent example of the traditional Costa Rican taste profile - sparkling acidity, hints of apple, nut, and soft cocoa flavors with a creamy mouthfeel. Green fruit flavors and cocoa persist into the finish.

Background Info

A coffee produced under the guidance of the famous La Minita Estate. Fully washed with full fermentation and dried in guardiolas, not sun-dried, but using La Minita's own design biomass furnaces for heat that burn coffee parchment instead of wood. The El Indio comes from coffee cherry purchased at buying stations and from various quality producers which La Minita has long-standing relationships with. All processing after harvest is controlled by La Minita.
