Background Info
Brazil – Safira is a natural dry-processed Bourbon varietal. Grown in the Mogiana region, in the Sao Paulo State of Brazil, it is a well-balanced cup with low acidity, chocolaty sweetness and citrus-like undertones.
Four estates (Fazenda Candeias, Fazenda Bom Jesus, Fazenda Limoeiro, and Fazenda Santa Rita) work with the mill to coordinate picking and handling in order to achieve an exceptional product. The coffee is grown at an altitude of 3,400 ft, dried on brick patios in the sun, and then finished in wood-fired drums to achieve a consistent moisture level.
